Purpose
In this course, students will - gain thorough knowledge of food and different food cultures - get foundational understanding of nutrition and nutrition values - be enabled to distinguish between healthy and other foods - become aware of the relationship between preparing food and cleanliness - acquire the necessary competence in preparing light and healthy meals at day nurseries, kindergartens and other institutions
Content
The course consists of 8 thematic and interrelated parts: 1. Types of energies in food stuffs (fat, protein and carbohydrates) 2. Vitamins and minerals 3. Lifestyle diseases – problems and prevention 4. Dietary guidelines and health plans, including NNA (The Nordic dietary recommendations) 5. Fresh and good food ingredients 6. Cooking and cooking utensils 7. Cooking and cleanliness 8. Food culture
Assessment method
Students write a paper and take a hands-on exam. Instructions on both paper and exam will be provided in class. Students must pass both paper and exam in order to pass the course. Grades will be awarded on a Passed/Not passed basis.
